Cherry Peanut Butter Balls

The Record’s “Recipe of the Week”:
Cherry Peanut Butter Balls by Patricia (Moennig) Horn

2 cups crunchy peanut butter
1 stick butter or margarine, softened
1 tsp. vanilla
4 cups (approx.) powdered sugar
3 cups Rice Krispies
Wilton chocolate candy melts
2 dozen sweetened, pitted cherries with stems or maraschino cherries

Line a cookie sheet with wax paper. Set aside.

Mix the peanut butter, butter, and vanilla. Gradually beat in the powdered sugar. Add the Rice Krispies with a wooden spoon. Place this mixture in the refrigerator for five minutes.

Melt the chocolte candy melts in a small, deep dish in the microwave.

Take a small amount of the peanut butter mixture and mold around the stemmed cherry until the cherry is covered. Dip into the melted chocolate using tongs. Place onto the wax paper lined cookie sheet. Refrigerate or keep in a cool place until the chocolate is hardened.

If there is any leftover chocolate, dip the remaining cherries.
