Parkin (Gingerbread from Britain)

The Record’s “Recipe of the Week”:
Parkin (Gingerbread from Britain) by Helen Smart

1 cup unsifted flour
1 tsp. baking soda
1 tsp. salt
1/2 cup sugar
1 T. ground ginger
4 cups quick-cooking oats, uncooked
1/2 cup butter or margarine, melted
1 cup light molasses
2 eggs
1 cup milk

In a large mixing bowl, sift the flour, baking soda, salt, sugar, and ginger. Stir thoroughly. Stir in the oats. Add the melted butter, molasses, egg, and milk. Stir until well blended. Turn into a greased 13x9x2-inch baking pan.

Bake in a preheated 350° oven until the top is firm to the touch and the sides have separated from the edge of the pan, 40-45 minutes. Place the pan on a wire rack and cool. Cut into 2x2-inch bars. Remove from the pan with a spatula and store in airtight container. Makes 48 bars.
