Low Calorie Secret Spaghetti Sauce

Low Calorie Secret Spaghetti Sauce by Nola M. Horat
10 oz. pkg. frozen mixed vegetables, thawed
1 small onion, peeled and quartered
6 oz. can tomato paste
10 oz. can condensed fat-skimmed chicken or beef broth
1/4 tsp. dried basil
1/4 tsp. oregano
1/4 tsp. salt
1/8 tsp. pepper
In a blender, combine the thawed vegetables, onion and tomato paste with enough broth to aid chopping without overflowing. Cover and turn blender on and off repeatedly until vegetables are coarsely or finely chopped, whichever you wish. Scrape down the sides of the blender frequently. The longer you process, the more the vegetables will “disappear.”
Pour into a two-quart saucepan and add the remaining broth and seasonings. Simmer uncovered until rich and thick. Serve over broiled chicken and a side order of tender-cooked spaghetti. Serves four. 98 calories each serving.
