Salisbury Steak
The Record’s “Recipe of the Week”:
Salisbury Steak by Daisy Davis
STEAKS:
1-1/2 lbs. ground chuck
3/4 cups quick oats, uncooked
1/2 cup chopped onion
1/2 cup tomato juice
2 tsp. salt
1/4 tsp. black pepper
1 egg
SAUCE:
1 cup tomato juice
2 T. cornstarch
2 T. brown sugar
2 T. onion soup (or chopped onions)
1/4 tsp. salt
Dash of black pepper
Dash of garlic powder
For the steaks: Mix all of the ingredients with a fork. Divide into 6 portions. Shape into 1-1/2” thick steaks and place on a broiler rack. Cook 4 inches from heat for 7 minutes, turn over and cook 5 minutes longer for medium rare, or continue cooking to desired doneness.
For the sauce: Combine all of the ingredients in a small saucepan. Cook over medium heat until thick. Serve over the steaks.
